Soil: ponca – evolution of marl and sandstone of Eocene origin Altitude: 150 – 200 meters above sea level
Training system: Monolateral Guyot
Density: 5,000 plants / ha
Harvest: by hand in boxes of maximum 12 kg at the end of August, first week of September
Vinification: partial full fermentation on the skins for 2/3 days in thermo-conditioned stainless steel tanks, soft pressing at the end of fermentation
Aging: in stainless steel and cement tanks thermo-conditioned for 6 months on noble lees (sur lie)
Color: coppery pink
Aroma: very intense and lively with fruit sensations, accompanied by notes of rose petals
Taste: dry white wine, structured, slightly aromatic with notes of golden apple, strawberry and thyme. Sapid and persistent with a mineral finish. Longevity: 4/5 years
Pairing: shellfish and grilled white-fleshed fish, raw fish, fried fish, mixed vegetables, fresh cheeses
Serving temperature: 12 ° C
